How much oil should the sump carry assuming the oil pump doesn’t wet sump?

None really.

This is a "dry sump" engine.

The scavenge/return system isn't perfect so there's always going to be some oil.

And the oil in the top end, cylinder walls etc will eventually get to the bottom of the engine.

This isn't a problem and you should expect to see some oil if you pull the drain plug.

It's different if you pull the plug on a bike that has been sitting for some time (weeks/months) and you get 6 or more ozs. out of there.

If the engine is mechanically sound and the pump and breather system are working as designed, there will be 4 oz or less of oil drained from the crankcase after coming in from a ride with the engine at full operating temp.
